Cold-brewing tea
  Cold Brewing tea has been around for ages, it was around even before cold brew coffee became chic. Cold-brewing tea is tea steeped in cold or room temperature water for an extended period of time. It is a slow and gentle steeping process that creates a sweeter and smoother tasting tea. Cold brewed white tea is shown to have higher amounts of antioxidants when compared to hot brewed.

Iced tea

  Iced tea (or ice tea) is a form of cold tea. Though usually served in a glass with ice, it can refer to any tea that has been chilled or cooled. It may be sweetened with sugar, syrup and/or apple slices.   No need to boil water. Because cold brewing water doesn’t involve hot water, it is perfect to make in the hot summer months. Cold-brewing tea is time efficient.

  • Cold-brewed teas taste sweet and smooth


 Cold-brewing draws fewer tannins into the tea compared to hot-brewing. Tannins are a type of polyphenol, an antioxidant compound in tea leaves that imparts an astringent taste to the tea. Fewer tannins result in a smoother, sweeter tea. And, fewer tannins may also have a health benefit.

 

  • Cold-brewed teas are safer than sun-brewed teas

  Cold-brewing involves bringing the dried tea leaves in to contact with water, placing the mixture in the refrigerator and letting it steep for eight to 12 hours. The tea leaves infuse the water with flavor, color and active substances, such as antioxidants and caffeine.


Use about 4 teaspoons of loose-leaf tea or four tea bags per quart of water. You can put loose-leaf tea directly in the water or use a tea filter or infuser. When the tea is done steeping, strain the leaves from the water or remove the tea filter or infuser. Try using whole leaf teas, you will get so much more flavor and body.  Some whole leaf teas now come in convenient sachets for easy brewing.

  Unlike sun tea, cold-brewed tea does not encourage the growth of potentially dangerous bacteria. Think about it: hot sun, sugar, water… sun tea is a microbe’s dream come true. One caveat for cold brewing: pu-erh and non-tea “teas” or tea-blend ingredients, like dried flowers, fruit or herbs, need a quick rinse of boiling water before you brew. Herbal blends are not typically heated during processing (thus they may harbor bacteria) and aged pu-erhs may have collected some dust over the years.

 

What type of tea to use for cold brew?

  Oolong works best for cold brew. Think fragrant sweet tasting Taiwan oolongs. The lighter roasts work better than the darker ones. Ali Shan Mountain Oolong is particularly good for cold brew because its sweetness gets accentuated. Tie Guan Yin and Jasmine Dragon Ball from China are also great choices.
